How they apply: imported menu before-tax = price ÷ (1+GST). Imported ingredient landed = price × FX × (1+import-tax) × (1+import-logistics). Local ingredient landed = price × (1+local-buffer). Target COG flags menus above target. All recipes recompute on save.
